120 exhaust manifold heat valve

I'm restoring a 120C and have two exhaust manifolds. In both the heat valve is solidly stuck. (what is the proper name, riser, valve, thermostat?)Seems to me in one of the forums someone wrote just forget about it. Doesn't seem right to me. Any advise? looks like both are quite solid with rust. Thanks Bruce
