I have no experience using "fork oil", though I've heard it mentioned. Many folks use hydraulic jack oil, and I prefer to use Mobil's hydraulic oil, DTE-24 is SAE10, and if the shocks tend to seep a bit, I use DTE-25 which is SAE20.
