The cooling system should not be left empty during storage because it will rust.
That aside, depending on the conditions water is fine providing you use a rust inhibitor which are becoming rather obscure.
Anti-freeze/Coolant will raise the boiling point around 15 degrees in a non-pressure system. Ethylene glycol was available at the time your car was built. The higher boiling point will help around hot spots.
