I did the steering wheel on a 633 some time ago and a friend has just his. We did it the same way you have described however we used 2 pack full gloss black then dulled the shine a litle with cutting compound and polish. They look both just right, compared to an original. I think satin would look a little dull unless you bring up the shine the same way we dulled ours off.
I guess you know that your rear seat backrest frame has timber strips laminated to the back of the top edge and 2 outer sides, about 1/4" thick, for attaching the upholstery.
