The gasket does not "go around" the thermostat. The thermostat
is about 3/4" above the bottom surface of the t-stat housing/cylinder head surface. It is retained by a wire retainer. Perhaps you are using a larger incorrect t-stat whose flange is at the joint between the head surface and the t-stat housing??. If so it will not perform as designed
