If they are both 288 engines then the smaller starter would probably be OK but I would make sure the cables are large, battery capacity is plentiful and connections immaculate. A small starter doesn't have any fudge factor and anything that could cut down on voltage or current could cause a problem.

If your engine is a 327 then I would be a bit concerned that with the extra cubic inches under compression and a smaller starter, it will not be able to spin engine fast enough or will try to pull so much current due to the load the voltage available to the coil could be adversely affected.

If you go with the small starter you might ask the rebuilder if there is anything that could be done in the way of different or larger field coils or poles that might increase the capacity.
