Hopefully this might help. On most switches the power hooks to the middle leg, and the power it transferred to one of the two other legs based on switch position. So if you leave one terminal not hooked up, then that is your OFF position.

You will have to look at the style of relay you have, but one the one pictured (similar to a horn relay), the middle is the trigger, the relay housing is grounded to metal via a the mounting screw. One side is the power feed, and the other side is the switched outlet.

This is a representative diagram. Switches and relays differ, as do there terminal configurations.
