Pistons and valves "look" okay, but don't know without checking. It does seem like the gasket wasn't sealing as well as it should have been. Here's a picture of my 327 from my 53 Cavalier when I dug into it last spring.

I went into my engine because I had a tapping sound, which turned out to be a very worn valve guide. I'm guessing there's a reason you decided to pull the head off? Did you have a noise? Low compression? Nothing better to do so decided to pull your engine apart? LOL

Do you know the history of the engine? Now that you're that far in, what's your plan?
