Sounds like the linkage perhaps needs adjustment to make sure the starter switch is activated before the accelerator bottoms out on the floor mat. Should be rather straight-forward, don't know if it's covered the the manual, but I'd think it's rather intuitive.

You might consider just checking the switch itself. Car in neutral, parking brake on, ignition on, and just use a short jumper from one side of the switch to the other.
