Setting valve lash (correctly and accurately) on an engine while it is running requires almost daily or at least monthly practice.

My recommendation is to get the engine warmed to full operating temperature. THEN set the valves to book spec. (if book spec is generaly accepted as correct). Err on the loose side when in doubt. THEN start the engine and check your work while it's running.
