What kind of Engine Upgrades/Mods?

My knowledge of engines is very basic at best. That being said,

I'm considering an engine rebuild on my 327 Thunderbolt 5 Main bearing engine in my '53 Clipper late this year, having a machine shop/restoration garage do the job. If you were to have the engine pulled, what type of work, if any, would you do on your engine to improve its performance?

I don't want to go too crazy, perhaps just trying to get as much performance out of the engine as possible while maintaining as much of a stock look as possible. I'm thinking in terms of cams, valves, pistons, honing, etc.
