When you have the manifolds off and assembled as a unit set, use a good straight edge to see if they should be surfaced; if there is enough warpage and it's not fixed, it's problematic to hold the gaskets.

I believe originally both manifolds were naked cast iron, no paint. Most judging venues I'm familiar and the standards of 1 of the Packard clubs allow for a black finish on the intake manifold. On the exhaust you can get and keep the appearance of "as cast" iron with Eastwood's stainless steel high temp exhaust manifold paint. Once the engine is run and the manifold gets hot, it dulls down to a very nice OEM appearance and if the manifold was quite clean to begin with, it will hold that appearance for quite a few years.

Personally, just on general principles I'd steer clean of paints that are specifically promoted to keep the heat within the engine.
