No, as previously explained, you don't have water in the oil.

Maybe, you're using oil of lower viscosity. The 0W-30 is thin, thin, thin; 5W-30 only slightly less so.

Yes, on an engine which had not had a precision rebuild 15W-40 is the preferred summertime oil. As long as the temperature is above 40 degrees it will be fine.

If the engine is rebuilt to specs, 10W-30 or 10W-40 should be fine.
