I'd put the car up on a lift, pull the starter and then pound out the freeze plugs. Put on a rain jacket and pressure wash the block out. You'll likely be shocked what all is in there.

As Owen mentioned, the V-8s are not prone to overheating so something quite fundamental is awry.
