Packardfan, on Kanter a carpet set is $219 and an upholstery kit is around $400. However, I'd heard of people spending even $10k to get their car reupholstered before so I would tread carefully.

The 55 and 56 Caribbean convertibles are very valuable compared to all of the hardtops. A hardtop selling for 10-20k would be 60-100k if it were a convertible in the same condition. Also, apparently Ross's Packard pickup conversions sell like fresh hotcakes. Safe to say the market right now is not really what an outsider may expect.
