The engine is a 359, not a 356. 356 is a 40-50 Custom 8.

I wouldn't bore more than .060, that's the limit for most engines. There are no pistons made larger than .060. You will get more horsepower perhaps a fraction of 1 horsepower, surely nothing you could notice or detect.
