I have two 356 equipped cars and one 327. I know the 356 engines take 7 quarts when filter is changed. What is the capacity for the 327 when filter is changed?

Depends on when the car was made. Look for a suffix on the motor number to see what size oil pan your engine is equipped with. I always thought the stated capacity was the oil pan only and if the car had an optional filter additional oil -- although not always a full quart -- was required.

Mine has the suffix c so I guess it does not have the larger oil pan? Though it should hold 6 qts, don't you add a quart if filter is changed? I never change the oil without a new filter so I guess I continue using 7 qts. Right?

My approach would be to use 6 to 6? quarts, run the engine long enough the filter housing to refill (3-5 minutes?) and then add whatever amount is needed to bring the crankcase oil to the FULL mark on the dipstick.
