You could always use the double nut way. put a nut partway down the stud then tighten another nut on top of that and install the stud. As for unevenness of the stud height you could put on some chrome nut covers from a Ford flathead
On another note I recently installed some ARP head studs in a 3800 Buick motor and ARP says to tighten the studs finger tight.
