I keep anything that I am replacing until the project is done. Just in case I need to do a comparisons and that's from experience. I hate clutter myself but you will save yourself the possibility of a headache down the road.

I'll ditto James especially if it's the original carpet.
Perhaps you or someone else could benefit in an original restoration. Getting exact dimensions, seam placement, edge boarder stitch style, swatch for exact color and look from an unexposed area, etc... could be very valuable detail. Otherwise like James suggest, find a place to keep it till your're finished with your current project. - Here is my version of "car restoration golden rules" - > Take more pictures than you think you need (before and during disassembly)! > Take a few more pictures! > Make good notes (for me, hand writing should be legible!) > Bag, mark and organize all parts removed! > Don't take short-cuts - be patient! > DON'T THROUGH ANYTHING THAT COME OFF THE CAR AWAY! > Take some more pictures!! I'm sure others have more "golden rules" of their own - and I hope get shared here.
