What's a good operating temperature?

Except for very stressful situations like stuck in traffic on a 100? day, or very long uphill grades requiring lots of throttle, a cooling system in good condition should result in engine temperatures of not more than 10? or so above the thermostat rating. If I had to guess I'd say that the 22nd/23rd series (except for the Custom 8s) had less extra margin of cooling capacity than models before and after.
