I set up a strip magnet to hold my valves in order and found out that the exhausts won't stick to it.

Anyone know what they are made of?

Being a steel guy, I am assuming a lot of chrome?

Packard logo valves or replacements?

Stainless steel exhaust valves are very commonly installed
by most engine rebuilders and are an alternative to installing hardened exhaust valve seats. Many (but not all) stainless steels are nonmagnetic.

Austenitic stainless are non magnetic, commonly referred to as 300 Series. Lots of chrome and nickel. Ferritic are magnetic and are in the 400 series.

The last the engine was touched appears to be the early '70's, right at the start of the '70 clean air act.

I will go look for a logo.

Thanks
