Coolant, Just the standard green stuff.
Packard originally called for 30wt oil. My motor in the '54 has some blow-by, so I run 15W40 diesel oil (Shell Rotella), which also is supposed to have higher zinc content vs regular motor oil. Not that that is a huge concern on our low valve spring pressure motors. Otherwise, a 10W30 or 10W40 would be fine.

I use Mobil 1 10w-30 in my '46 Deluxe.
I probably should check-n-change the oils in the trans and diff before much longer. No idea how long since the last time, come to think of it.

Just to add my experiences:
I have lived in Florida, upstate NY, and coastal VA with my 120. I've used Rotella 15W-40 in all those conditions with no issues. On transmission, I saw SIGNIFICANT driveability improvements when I drained whatever the PO had in the transmission and shifted to the Napa GL-1. It was honestly like I rebuilt it. Every shift was smoother and quieter. What came out of the transmission was gear oil, and not overly black, so it appeared to have been in decent shape, but the shift to GL-1 was very noticeable.

I was told by the gentelman that actually rebuilds the overdrives and transmissions that you shoul only use the Napa GL-1 mineral gear oil because the modern additives destroy the brass bushings especially in the overdrive, and like you use 15W40 Rotella, my car shifts great and the overdrive kicks in smoothly
