The parking lights are the dim rear brake lights which are on during dusk or night driving.
I believe in the UK you say dipped beam and full or main beam. We say low and high beam, respectively, but the manual predates that time, and says city and country driving lights, respectively. The difference between the second and third notch is that in the second notch, the foot switch switches both headlights between dipped and full beam. In the third notch, the foot switch clicked to "dipped beam" will keep the right side (passenger side and shoulder side in the US) light on full beam because when driving past an oncoming car (to your left, again make sure you picture American driving here) it was only considered necessary to dip the left side beam. Whereas when driving behind a car in your own lane you should dip both beams. For UK night driving I would leave the headlight switch on the second notch as your roads are reversed compared to ours, and the single dipped beam will not have the intended effect.
