You seem to be looking for support for rationalizing rodding the car. It’s your car, do what you want. But adding a bunch of mismatched stuff is neither simplifying nor necessarily improving the job

I agree. Simplest thing is to redo the wiring harness, keeping all equipment to original specification. Changing voltage will only add to the necessary changes on the car, not subtract.

Unless you are dead set on adding accessories that require 12V (A/C?) then I would highly advise against it.

'55 400. Needs aesthetic parts put back on, and electrical system sorted.
'55 Clipper Deluxe. Engine is stuck-ish.
