I'm a very old mechanic and still use very old equipment. I can do valve jobs with the engine in the car. But, due to the debris it causes, I prefer to do it when the engine is out and can be completely cleaned afterward. So, if you intend to do your own make sure you keep the internal parts of your engine free of grinding dust etc.

i too can do them the old way. my uncle who i often speak of owns a sioux valve grinder, and a seat grinder that his uncle bought used when he came back from wwII. i learned to grind valves on it. i'm just stating that most machine shops do not have this kind of equipment anymore
