Joe Santana installed a solar powered and rechargeable back up camera in his 40. Perhaps something like that would work or maybe the company has a dash cam application. If you send him a PM he could probably provide mfg and model details on what he used. A couple of photos showing the camera are in his Duchess project blog.
Another option might be to get one of the 6 to 12v power converters and use the 12v camera of your choice. Here are typical converter configurations. Several brands and output capacities are available in the converters and most will be able to be wired so you could have a positive ground input and negative ground output although you do need to make sure that capability is specified or take care to mount them isolated from ground. As long as you watch the output polarity and take care to make sure the camera internals are not grounded in some way that could lead to a connection between the camera ground and car ground with a short or wrong voltage result almost any of them would work for the purpose of camera power -- providing the output matches or exceeds the camera needs. The typical step up converters do not like the surge current motors or solenoids pull so the camera system would need to be free of those.
