If anyone is curious about BTV numbers, here are some very non precision results of some testing I did. It is not very scientific and accuracy may depend on methodology which may be suspect.

Using what I had available, just needed something with some numbers as a starting point that I could duplicate later. Want to get a rough comparison as to how the modern booster replacement will do under the same conditions when that little project is complete.

So to recap and find out if I understand your test correctly:

With 100lbs of force on the pedal, the BTV outputs a line pressure of:

1) 200psi with no vacuum assist
2) 500psi with immediate "ON" vacuum, but still at stroke of 1) above.
3) 800 psi with 21in of vacuum and full stroke at 100lbs force on pedal.

Do you plan on testing the new 7in single as well as 7in dual?

Yes to all. The immediate 500 psi and less pedal force is the pedal falling away effect when you start the engine. I jacked it back up to just over 100 to keep the same pedal number but overshot slightly.

Do plan on doing the 7 single with 2 or 3 different ratios but same other conditions. Main difference will be in the 1" master cylinder diameter so will be interesting. 7" dual as well, but when and if sort of depends on how the single 7 compares to original.
