The big advantage with the shutter controlled cooling is that the waterflow is always the same, hot or cold. This means that your engine is getting enough water to keep it at a constant temperature everywhere in the engine block. Thermostats that control the waterflow will restrict the flow and if the flow is very slow the engine will not heat up evenly. Especially in a straight 8 this can mean that the engine is colder at the front and warmer at the rear end.
Bellows thermostats react very quickly- if they are in order- and give you a relatively even temperature.
