this is looking straight down my thermostat hole. I am under the impression what I see is the original thermostat and it needs to be replaced with a modern thermostat. Does anyone know if I need to remove that one or just see if it works. Any thoughts?

I'd remove and get a new one. It sure looks like it could at the least stand cleaning. Packard used the capsule type thermostats in 55 so don't recognize that coil looking part. If your car is typical you may also find the outlet flange the hose attaches to rusted and thin.
