Sounds like the linkage perhaps needs adjustment to make sure the starter switch is activated before the accelerator bottoms out on the floor mat. Should be rather straight-forward, don't know if it's covered the the manual, but I'd think it's rather intuitive.
You might consider just checking the switch itself. Car in neutral, parking brake on, ignition on, and just use a short jumper from one side of the switch to the other.

Dave is correct about the adjustment. It is very simple. Just take the link arm loos at the firewall location and adjust the turnbuckle there. For some reason these do seem to readjust themselves sometimes. He is also correct that the switch on the carburetor should be checked they tend to accumulate carbon and stick.

For anyone wishing the official details of the adjustment, here is from an old Motor's manual. Granted the Carter gauge won't be easily found but maybe anyone attempting could get an approximation of what is needed from the pictures.

I cant imagine why it wouldn't. Nothing voltage or polarity sensitive about it. Just a vacuum/mechanical actuated switch that energizes trigger terminal on the starter solenoid. Obviously you would need a 12 volt solenoid.

Yeah that makes sense. Have to keep reminding myself that this 6volt stuff is actually heavier than the 12Volt. Do you know where I can find a 12 volt solenoid and 12volt field coils for the generator? Thanks

The solenoid you should be able to get at any parts store depending on what your original style looked like. I found mine at napa pretty cheaply.
Not sure if it may just be cheaper to find a generator from a 55/56 Model, or any other similar 12v car from the 50s. You will also have to replace the voltage regulator obviously. Then of course there are all the other things that would have to be changed for a 12v conversion. But if you search the forums on that topics it been covered over and over again. Any particular reason for switching to 12v?
