Prior to the rebuild was the engine temperature okay?
How hot is it running?

During the rebuild, was the brass water distribution tube found to be in good condition?
Incidentally, your hood ornament's wings are on backward with the left and right sides reversed. They appear to be the proper wings but put on incorrectly.

When the engine is cold, start it and go for a drive in 35 mph zone, watching the temp gauge move from cold, keep watching until it reaches it peak, then descends. That shows the thermostat is working.
Does your mechanic have a laser thermometer. You can use it to take readings from different parts of the engine by just pointing. Also you’ll get actual temp, if your gauge is registering incorrectly. There should be temperature specs in the owners manual, online here if you don’t have one.

More than once have folks in recent times been bitten by rebuilt water that dont have the impeller pressed on at the correct position which then have too much clearance between the impeller and the back plate on the water pump. This causes cavitation and greatly reduces the amount of water the pump can push through the engine.
You can pull the pump and measure the clearance and see it it matches the recommend specs in the service manual.

Has this car's 6 volt electrical system been converted to 12 volts?

Water pump impeller clearance is critical, as is the water distribution tube being in place and in good condition. Be sure the fan is not installed backward. If this car has a honeycomb style radiator, they can be very hard to clean effectively. Be sure the thermostat is not installed upside down, and be sure the system is actually full of coolant. It's worth noting that a perfectly clean radiator can be clogged in a few minutes if it is installed on a car with any loose debris in the block.

It was running well recently. And it drives fine. The only thin that has changed is a dramatic increase in the engine temp.
